‘Cucumber, Radish & Dill Pickle’

This is probably one if the easiest and tastiest ways to make your mouth go POW!

I like to dish this up as a condiment at a BBQ, it’s got something naughty about it that makes you hit it before anything else and then sticks its claws into you and makes you go back for more and more because it works well with pretty much anything else you want to eat.

Perfect with a grilled bit of Salmon, more than perfect whacked into a burger, it does something spectacular to  a hotdog or spooned on top of a nice juicy steak. It’s not strictly for use with food like this though, you can take it to another level and use it at a dinner party, maybe serve alongside some potted Crab or Mackerel, or use as a garnish on some grilled Chicken or Hake! If you are really adventurous you could try and match it with a dessert, I once visited Prague with my girlfriend and we ate in Michelin starred Alcron where they served us a white chocolate dessert with pickled cucumber!!!


Serves 6 – Takes 30 minutes


  •  1/2 a Cucumber
  • 8 Radishes
  • 1/2 a Red Onion
  • Sprig of chopped Dill
  • 75ml White wine vinegar
  • 75g Caster Sugar
  • Salt & Pepper

This is one of the quickest things you will ever throw together! In a food processor attach the thinnest slicing blade attachment and push through the Cucumber, Radishes and Red Onion. Once its all sliced place in a bowl and add the Dill, salt & pepper, sugar and vinegar. That is all of the work done, now all you have to worry about is waiting for the sugar and vinegar to pickle the vegetables, and as the veg has been sliced so thin this won’t take long at all. If you leave it in room temperature it will pickle quicker, you could use it within 20 – 30 minutes but the longer you leave it the better it will be.
